Happy Monday

Hi hope you had a wonderful Weekend!! I did a women's exo event this weekend and it was so much fun. I will share a few pictures of my booth in progress. Please sceol to the bottom though because I will also have the weekly deals posted for you too.


I was very happy with the way it turned out and I got lots of great leads on potential customers too.
My daughters all commented on my Starbucks cup that made it in almost every picture

Pumpkin Pound Cake

I was searching for a pumpkin pound cake recipe, finding none, I decided to create my own

Ingredients


1/2 pound (2 sticks) butter

3 cups sugar

1 cup sour cream

1 15 oz can pumpkin (unsweetened)

1/2 teaspoon baking soda

3 1/4 cups all-purpose flour

1-2 tsp cinnamon depending on your pesonal preference


1/2 tsp  ground ginger

1/4 tsp pumpkin pie spice

6 large eggs

1 teaspoon vanilla

Directions

Preheat oven to 325 degrees F.

In a large mixing bowl, cream the butter and sugar together. Add the sour cream and pumpkin and mix until incorporated. Sift the baking soda and flour together, mix in spices. Add to the creamed mixture alternating with eggs, beating each egg 1 at a time. Add the vanilla and pour the mixture into a greased and floured 10-inch tube pan I used a Bundt pan. Bake for 1 hour 20 minutes. While still warm, remove from pan and glaze with pumpkin icing(recipe below)

Pumpkin glaze:
2 cups powdered sugar
2-3 Tablespoons or more Pumpkin spice flavored coffee creamer.
Mix to a glaze consistancy and drizzle over warm cake
Enjoy
this cake actually is moister and more flavorful the next day but is great warm too!

Good morning to you!!

Hope everyone had a great weekend!! I had all of my children, son in law, and sweet grandson here and it was wonderful. The times we can all get together are so precious and this little guy... I think I could keep him, At 18 months old he is so much fun.

Pumpkin Cornbread

Just had to share you a recipe I tried last night for pumpkin cornbread. Maybe it sounds a bit odd, but let me tell you it is delish!! We had it with a big pot of Chicken Tortilla Soup and it was a wonderful dinner.
Pumpkin Cornbread
Pumpkin Cornbread 3

Ingredients:

1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 Tablespoon baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup cornmeal
2 large eggs
1 cup unsweetened pumpkin puree (canned or freshly cooked and processed)
2/3 cup light brown sugar, packed
1/4 cup canola oil
1 Tablespoon molasses

Directions:

1. Preheat oven to 400°F. Grease 10-inch glass pie pan or 9-inch square baking pan.
2. Sift flours, baking powder, salt and spices into a large mixing bowl. Whisk in cornmeal.
3. In separate bowl, beat eggs lightly. Whisk in pumpkin, brown sugar, oil and molasses.
4. Make a well in the dry mixture. Add pumpkin mixture and blend batter with a few quick strokes (just until blended- don't over-mix).
5. Pour batter into prepared pan. Bake for 30 minutes, or until cornbread is browned and the surface has a slightly springy feel.
Found this recipe on a blog called Recipe Girl  She uses Bob's Red Mill Coarse corn meal  I just used regular corn meal and it was delicious. We topped it with honey and butter YUM!!

Jewelry!!

Last night I launched the new Sara Blaine Jewelry Division of my Willow House business, by having an open house
Ladies had fun trying on the pieces and browsing through the catalog, all while sipping on wine and sampling cheeses and chocolates. It was a great evening and this jewelry is amazing. It is a line of designer not costume jewelry and filled with amazing detail.
