Change

Happy Wednesday!

If you do not get my monthly newsletter or you didn't have a chance to read it,
I wanted to let you all know that our Home Decor Division of Willow House
will be phasing out over the next several months. 

It's certainly been a sad time for me as I've sold home decor for the last several years.
BUT, we do have an amazing Jewelry by Sara Blaine Division
and that is where the company will be focusing their energies.
I do also sell the jewelry so I'll still be a Willow House Consultant. :)
I'm excited about the new opportunities that are opening up!
I'm booking parties NOW so let me know if you'd like to be the first of your friends to host.

Thoughts from a momma's heart

I am bouncing between excitement and sadness today as I think about the changes to come in our family in the next week or two. You see, Andrea our middle daughter is moving out. While that is a normal thing for many parents right now with college age children, it is not so normal for us. You see Andrea is a 26 year old special needs adult. Sending her out into the world is a bit scarier than most "normal" situations. 
Let me just share with you how we arrived at this new change to come. 
I have always thought "She would always live with us, we would never be empty nesters, after all, she is our responsibility and we should take care of her" and while that is all well and seems like the right and noble thing to do, It isn't right for Andrea. The Tv is her best friend and a walk to the "coffee " store almost daily have become her "life" The friends she grew up with have all grown up and moved away and she is left behind so to speak. We live in a small community that does not offer very many if any resources for higher functioning special needs adults. We have worked with many agencies to find employment and more social things for her, and other than a few Volunteer jobs there is just not much available.  It became clear to us after much prayer and consideration, that a bigger city (one in which her 3 sisters all live in) may offer much more for her. Last year we started researching Group home possibilities and as is often the way the Lord works we were led to a wonderful home by a good friend. We have been on a waiting list all this year for that wonderful Godly home for her. Through a series of events the owner of this home recommended us to another Adult Family Home that seems an even better fit for Andrea. We met them last week and we loved them instantly and knew that God had led us to this home and this family for our Andrea. Andrea hit it off quickly with one of the other residents and it did my heart good to hear them laughing and talking together. They will work with us to get her plugged into some Job and recreational activities and make Andrea feel at home. Her sisters are very excited to have her nearby and are already planning outings and visits with her. While I am excited, there is a great deal of sadness in my heart at this change. I know in my heart that this is totally a God thing and a blessing for Andrea, but this momma is having a hard time letting go. I would so appreciate your prayers as we make this transition and especially on moving day Sept 29th

Choose Joy

Ever have one of those months where every time you turn around something is breaking?
For me it started with the ice maker in our fridge and then a spring in a recliner broke. Not big things, and the part is already here for the ice maker, the recliner is repaired under warranty. A few days go by and the oven door explodes. Yes Explodes. It was not being used, just on warm, no food in it and the glass just blows out all over the place. So, 17 year old oven now needs to be replaced, went to get one and of course it has to be ordered (we live in a small town) but yay new oven on the way. Next the air conditioning system breaks down. After the 3rd service visit it is now told that we need a whole new system. Yikes, what is going on here. (well it is 15 years old)  Next morning the toaster quits working and today the fan that we use in our bedroom breathed it's last. I have two choice here, I can be upset and angry or I can be thankful for the things I do have, like food and shelter and a loving family. 
You see, in my thinking about all of this, yes, it is costly and yes a lot of things happened at once but really they are all just minor inconveniences. There are people all around me that have lost jobs or lost homes in huge forest fires, there are folks who don't even know where the next meal is coming from. My issues are small compared to those things. It is all about perspective and attitude. You see, we can deal with our circumstances in anger or resentment or we can choose JOY in spite of our circumstances. I am choosing Joy

National Zucchini Day

It's national Zucchini day so let's celebrate with cake!!



Chocolate Zucchini Cake Recipe



Ingredients

  • 1-3/4 cups sugar
  • 1/2 cup canola oil
  • 1/4 cup butter, softened
  • 1/2 cup buttermilk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2-1/2 cups all-purpose flour
  • 1/4 cup baking cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 2 cups finely shredded zucchini
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup sliced almonds

  • Custard sauce
  • 1/2 cup sugar
  • 2 tablespoons all-purpose flour
  • 2 tablespoons cornstarch
  • 3 cups whole milk
  • 3 egg yolks
  • 3 tablespoons butter
  • 1/4 teaspoon almond extract


Directions
In a large bowl, beat the sugar, oil and butter until well combined. Beat in the buttermilk, eggs and vanilla. Combine the flour, cocoa, baking soda, cinnamon and cloves; gradually beat into oil mixture. Stir in the zucchini, chocolate chips and almonds.
Pour into a greased and floured 10-in. tube or fluted tube pan. 
Bake at 325° for 55-60 minutes or until a toothpick inserted near the center comes out clean. 
Cool for 10 minutes before removing from pan to a wire rack.For sauce, in a large saucepan, combine the sugar, flour and cornstarch. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer.Remove from the heat. Gently stir in butter and extract. Serve warm with cake. Store leftover sauce in the refrigerator. Yield: 12-16 servings.

It's national Cheesecake Day!!

In honor of National Cheesecake Day, here is one of my favorite Cheesecake recipe for you!

Baileys Cheesecake




ingredients

  • CRUST:
  • •6 whole graham crackers
  • •1/4 cup, 1/2 stick unsalted butter, melted
  • FILLING:

  • •7 Tbls. sugar
  • •3 8oz. pkgs. cream cheese, room temperature
  • •1 Tbls. all purpose flour
  • •2 large eggs
  • •1/4 cup plus 2 Tbls. sour cream
  • •1/4 cup plus 2 Tbls. Bailey's Original Irish Cream liqueur
  • •1 tsp. vanilla extract
  • GLACE':

  • •9 oz. semi-sweet chocolate, chopped
  • •1/2 cup whipping cream
  • •Shaved chocolate curls
  •  ( white chocolate ones too)

    • Preheat oven to 350 degrees. Finely grind graham crackers in processor. Add butter and blend until combined. Press crust mixture onto bottom [not sides] of a 9 inch diameter springform pan. Bake crust until golden brown, about 8 minutes. Transfer crust to cooling rack and maintain oven temperature.
    • PREPARATION:
    • •Using an electric mixer, beat cream cheese and sugar in a large bowl until smooth. Beat in flour Add eggs one at a time, beating just until combined. Mix in remaining ingredients.
    • •Pour filling into crust [will not fill the pan]. Bake 10 minutes at 350 degrees and then lower heat to 250 degrees and bake for 30 more minutes. Run sharp knife around pan sides to loosen cake. Cool. Chill overnight.
    • •Bring cream to a simmer in a heavy medium saucepan. Reduce heat to low. Add chopped chocolate and stir until melted and smooth. Cool glace' to lukewarm.
    • •Release pan sides from cheesecake. Place cheesecake on rack placed over a cookie sheet. Pour glace' over cheesecake, spreading with a spatula to cover top and sides and allowing excess to drip on to cookie sheet. Refrigerate until glace' sets, about 30 minutes. Transfer cheesecake to platter and garnish with chocolate curls.

Sweltering hot !! Tips for beating the heat!!

It is sweltering here in the Pacific Northwest!! Sunday we topped out at 104 degrees. I love the heat but I know many do not. What are some things you do to keep cool? 
Here are 10 tips from TIME NEWS

  1. Turn Your House Into a Cave. With no air-con, the only option for keeping your house warm is to stop the hot air from getting in. Window reflectors are a great starting point: cardboard wrapped in aluminium will keep the light and heat out. Just make sure you have the reflective side on the outside, otherwise it will have the opposite desired effect. Alternatively, keep your blinds drawn and windows open so that some air gets in. 
  2. Sweat. While this may be an unpleasant option, you may have no choice but to embrace your body’s novel way of cooling you down. To help the process, make sure to keep yourself topped up with fluids and electrolytes and avoid wearing make-up and creams – they clog up your pores and get in the way of the sweat.
  3. Have a Wet T-shirt Competition. More fun that just simply sweating, the wet t-shirt helps keep your skin in constant contact with cool water and aids the cooling down process. Alternatively, try soaking some sponges in ice water and putting them down your top – it’s what the triathletes competing in Hawaii’s Ironman competition do.
  4. Take a Shower. After all that sweating and the wet t-shirt competition, you probably don’t smell so great. Take a cool shower or bath to fully appreciate the cooling and cleansing, powers of water. 
  5. Eat all of the ice-cream. Now. With the power out, it’s important to eat all of the perishable goods that won’t survive out of the freezer, especially if said goods are ice-cream. The Food Safety and Inspection Service have very helpfully compiled a list of the life-span of foods left out of the fridge/freezer. You’ll find yourself on a diet of peanut butter and jelly sandwiches, but stay away from dairy, meat and fish as it goes off very quickly.
  6. Have a Cookout. Rather than throwing away all of the food that won’t keep, why not indulge in a cookout and invite the neighbors round? Avoid protein-rich meals though, which can warm the body and increase metabolic heat.
  7. Look Out for the Vulnerable. Not everyone is well equipped to handle the heat on their own. Those who are most susceptible are the elderly, the sick and children under five. Make sure to read up on the signs and symptoms of heat exhaustion and heat stroke so that you know when to contact emergency services. Heatstroke is a severe condition which needs immediate attention: symptoms include seizures, red-flushed skin, a body temperature above 106 degrees Fahrenheit and no signs of sweating. 
  8. Use a Flashlight, Not a Candle. It may seem obvious, but candles are probably not the wisest light sources during a power outage in a heatwave. You’ll want to avoid using matches and open flames as much as possible. 
  9. Hang Out at the Mall. Or the cinema, local library, recreational center or gym. Maybe even your office. Many public buildings should still have air-conditioning and other sources of entertainment. You could read a book, charge your phone or just watch a film. 
  10. Take a Nap. A siesta is a perfect antidote to dealing with all the heat, stress and boredom that you’ll invariably experience. Taking a nap in the middle of the day also has proven health benefits, so it’s a win-win situation.
