A treat for  you!
I got this recipe from a sweet southern lady years ago and they have been a favorite ever since. There are many variations on this bar cookie but this is our fav!
Mississippi Mud Bars
1 cup butter

4 large eggs
3 tsp.vanilla extract
1 1/2 cups all-purpose flour
1 1/4 tsp.salt
1 Cup chopped Walnuts
3 cups miniature marshmallows
Mississippi Mud Frosting (see below)
Preheat oven to 350 degrees. Grease 9x13 pan.
Cream butter & sugar until fluffy  add eggs one at a time beat until well mixed add vanilla and stir in dry ingredients. stir in the walnuts spread into prepared pan and bake 35 to 40 min do not over bake.
Remove from oven, top with marshmallows, return to oven until marshmallows are lightly browned. Just a few minutes.
Pour frosting over all and let set the frosting sinks just a bit and top will look messy (MUD) cool slightly cut and enjoy this sinfully delish treat

3/4 cup butter
1 1/3 C Unsweet cocoa powder
1 lb powdered sugar
1/2 c evaporated milk

  10. Debbie: I have a cheater's version of this. I buy a pan of ready made brownies at the grocery store. I put mini marshmallows and nuts on the top. Poke holes with a fork over the top. Take a can of of chocolate icing and heat for 30 second intervals in the microwave till icing is melted. I pour the icing over the top of the brownies and marshmallows. Let the icing cool and set. INSTANT Mississippi Mud Cake! People think it is made from scratch. I use this in a pinch if I have to take a dessert somewhere and am pressed for time. But the real deal made from scratch is ALWAYS better, for sure!
