My favorite "go to" soup

We love soup on cold winter nights! One of my favorites is one we call
Carolina hot pot (not sure why it has this name) It was a regular meal almost weekly  when I worked full time. It is easy,quick and delish!!!  Great served with home made rolls or cornbread.( even a loaf of hot french bread from the grocery on the way home from work is yummy too!!
add beans and corn

Carolina Hot Pot
3 cooked diced chicken breasts ( I have also used canned chicken from Costco  2 cans)
2 cans each pinto beans ,kidney beans, Rotel tomatoes, and diced tomatoes
1 Tbl  Chili Powder (can add more for spicier soup)
2 cans corn (I prefer frozen so I use about 2 cups frozen corn)
I packet Hidden Valley ranch dressing mix (dry)( do not leave this out)

Do not drain cans. Dump all ingredients into your favorite soup pot stir well and heat through. Ready in about 30 minutes.
enjoy!! Great wit ha bit of shredded cheddar cheese on top too
Many times I will put this in the crock pot in the morning on low and then it is ready when we walk in the door in the evening. Every time I make this for company everyone always wants the recipe.

  3. That looks soooooo gooood! Now you got me wanting cornbread too. Love me some cornbread! I'm bookmarking this for when we have another cold spell (it's 68 today).

  6. Yum, Debbie! I'll be making this recipe soon...gotta wait til a cold night though. We're enjoying a little tease for spring in the Carolinas this week...in the high 60's!

  8. Being a Carolina girl, I had to check out your recipe when I saw it at Soup-a-Palooza! I'm sure my hubby, aka, "The Chef," has made this or something similar before... I just can't recall. The name does ring a bell and he might be able to tell you where the name came from (check out our "Ask The Chef" feature!). I'd also like to invite you to participate in Foodie Friday. Oh... and LOVE your blog... it's beautiful, makes you feel like you could "stay a while," which is the point, I'm guessing! :)
